I’m an Italian executive development chef and I was head of pasta production for itv chef Gino D’acampo and individual restaurant company (Piccolino, Riva Blu) for 12 years up to 2021.

I’ve been private chef and nutrition consultant for various premier leagues football players and sport pro since 2005.

I now have my own established Gastro pub in Stockport, “The Midway“.

I’m available for bespoke catering and to teach you how to create the perfect dishes or fresh pasta from scratch.

Authenticity, Reliability And Reputation

I was born in Italy and I worked with Italian chefs since I was 11. I studied Italian and French cuisine in Switzerland, returning to my beloved home town of Parma to specialise in pasta making. After being a sous chef for 10 years in two 3-Rosette restaurants, I then went onto work in two Michelin- starred restaurants and the acclaimed Italian cooking school Alma - La Scuola Internazionale Di Cucina, where my skills in bakery and pastry were further honed.

Oscar winning Italian. Grand Dame Sophia Loren famously said "Everything you see, I owe to Spaghetti", and quite frankly, I agree with her. Italy wasbuilt on the back of pasta; some of our most iconic dishes showcase this most humble yet versatile of Italian ingredients.

Which is why I had to work with the chef whohas dedicated his life to it.

Fabulous food, easy communications to organise and both Marcello and Carmen are delightful. They go out of their way to make the event a success.

Marcello cooked us a wonderful, very tasty 3 course meal on the 18th May for my sister’s hen party which was for 13 people. This included a glass of bubbly, a talk through the history of pasta which was very interesting and a food demonstration of ravioli – which was delicious and great fun to learn how to make fresh pasta. Marcello and John were the perfect hosts, very friendly and made the evening very special, catering for our every need. Not only were we cooked for, but the food was served ...
